Do you need more veggies in your life? Here's a simple broccoli salad recipe that calls for blanched broccoli. Lightly cooking the broccoli ahead of time makes it easier to digest and brightens up the color. Blanched broccoli also keeps it's crunch so no need to worry about having a soggy salad.
Chop broccoli into bite sized pieces and place in boiling water for 1 - 2 minutes. Broccoli will turn a bright green color when ready. Take the broccoli pieces out of the boiling water and put in a bowl of ice water for 4 - 5 minutes to chill. The goal is to stop the broccoli from cooking so the pieces don't get soft. When the pieces are cold to the touch take them out of the ice water and leave them to dry on a kitchen towel.
In a large bowl combine the broccoli, bacon, sliced almonds, onion and carrots. In a separate bowl, combine mayo, stevia, lemon juice and salt and stir until mixed. Pour over dry ingredients and mix. Serve with extra bacon! :-)
