Here's a healthy and tasty twist on a good old fashioned dessert. Real gelatin is that good stuff found mainly in the bones and connective tissue of animals. According to Weston A. Price, gelatin is good for your skin, hair, nails, joints, and can aid digestion. Pair it with coconut whipped cream and you have a healthy and unique treat.
Bring one cup of water to boil and seep 2 camomile teabags in it for 5 - 10 minutes. After it is done steeping add the honey to the hot tea. In a ceramic or pyrex bowl, add the cup of room temperature water and gelatin. Stir with a fork for about 30 seconds to a minute. You will get a thick gel that looks slightly grainy Pour the hot tea with honey into the bowl and mix by hand for about a minute. Place in the refrigerator overnight. Serve with coconut whipped cream and garnish with lemon zest and pomegranate seeds.
